So, my first attempt at chia pudding was mostly a thumbs down from the family. Nevertheless, I gave a different concoction a go and this one was a thumbs up! Yay! All the health benefits of chia seeds and a wonderful dessert after dinner.
If you aren’t familiar with chia seeds, they get thick when liquids are added… hence the pudding!
- 1 1/2 cups non-dairy milk of choice
- 2 heaping Tbsp natural peanut butter (preferably an all peanuts one)
- 2 heaping Tbsp cocoa powder
- 1 Tbsp natural liquid sweetener of choice (maple syrup, agave, honey)
- 1/4 cup chia seeds
- dash of vanilla
- optional: sliced bananas
Combine everything except the bananas in a food processor or blender. (If you want to avoid using one of those, you can whisk well together the first 4 ingredients and then add the others.)
Place mixture in a glass container in a fridge. Allow to sit for at least 3 hours. Stir well and serve, with fruit if you wish. Healthy and delicious!
