Really! A dessert I’m happy to serve my kiddo! Hubby thought it needed more sweetener (I went with the 5 Tbsp) and it was the chocolate chips that saved them, but my 5 year old enjoyed them immensely and continued to ask for them for dessert. And she doesn’t even like sweet potatoes!
- 1 1/4 cups mashed sweet potatoes
- 3 1/2 oz dates (heaping packed 1/2 cup)
- 5 Tbsp (or more) maple syrup or liquid sweetener of choice
- 1/2 cup whole wheat pastry flour
- 2/3 cup almond meal
- 1/3 cup cocoa powder
- 1/8 tsp salt
- 1/3 cup chocolate chips
In a high powered blender or food processor, combine sweet potatoes, dates and sweetener. Run until completely pureed and smooth.
Preheat oven to 350.
Transfer to a bowl and add flour, almond meal, cocoa powder, and salt. Stir until combined. Add chocolate chips and stir until combined.
Prepare a 9×9 pan with a piece of parchment paper. Scoop batter into pan and gently press to fill evenly. Bake for 25 – 30 minutes or until a toothpick comes out clean. Allow to cool for 5 minutes in the glass pan. Then, lift out parchment and cool the rest of the way on a cooling rack.
