- 3/4 cup spelt flour
- 1 Tbsp tapioca starch (or any starch)
- 1/3 cup succanat or sugar
- 1/4 tsp baking powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 2 Tbsp ground flax meal
- 3 Tbsp almond milk
- 1/4 cup all natural, only almonds, almond butter (or any nut butter of your choosing!)
- 2 Tbsp oil
- 1/2 tsp vanilla
- 1/4 tsp cinnamon
- 1 Tbsp succanat or sugar
- 2 tsp cinnamon
Preheat oven to 375.
Combine dry (first set) ingredients and mix well.
Combine second set of ingredients and whisk well.
Combine the wet into the dry and stir until fully mixed. Roll into little balls, and roll in a bowl of the sugar and cinnamon (3rd list). Then place on a baking sheet and press into a flat cookie with a fork or your hand.
Bake at 375 for 10 – 12 minutes. Allow to cool on pan for 5 minutes before transferring to a cooling rack. Enjoy!
