Peanut Kale Salad with Forbidden Rice

I was excited to try “forbidden rice” also known as black rice.  I must say that I haven’t ventured much into the interesting rices.  This was different and yummy, and supposedly filled with all sorts of antioxidants!!  This is a nice veggie and grain side dish that will go well with a veggie burger or whatever you’d like.


  • 1 cup uncooked black/forbidden rice
  • 2 bunches of kale (about 12 oz once stems are removed)
  • 1/4 cup all natural, only peanuts, peanut butter
  • 2 Tbsp honey or agave
  • 1/4 cup fresh lime juice
  • 2+ Tbsp water
  • 1/2 tsp minced fresh ginger
  • peanuts to garnish, optional

Prepare black rice according to package instructions, ahead of time if possible!

After removing kale stems, tear kale into bite size pieces and place in a large bowl.

Whisk together dressing ingredients, adding enough water to get a good consistency.

After rice is done, cool.  Pour dressing over kale and toss well, making sure each leaf is coated.  Then add cooled rice and carefully toss.  Serve room temperature.

Top with chopped peanuts when serving if you wish.
