Made up this easy side dish the other day. Simple and you can totally modify it to fit the veggies you have in the house.
- 1 cup brown rice
- 1 carrot, diced
- 1 cup diced broccoli
- 1/2 onion, diced
- 1/2 cup frozen peas, thawed
- 2 Tbsp reduced sodium tamari or soy sauce, or to taste
- 1/2 Tbsp rice vinegar (or other vinegar)
- 1 tsp garlic powder
However you wish, cook brown rice. Here’s my way.
When the rice is nearly done, saute carrot, broccoli and onion in a bit of water or oil or dry. When cooked to your liking, add frozen peas, tamari, vinegar, and garlic powder. Put a lid on and simmer a bit. Turn off heat and wait until rice is ready.
Once rice is ready, add to pan and saute a bit, stirring the veggies into the rice. Serve with whatever you’d like. Enjoy!
