Hot Chocolate (date-sweetened)

Ok, this was impressive!  Some gals got together for a “Vitamix Night” and we all brought Vitamixes and the ingredients to make things.  After we made some homemade almond milk, we then used it to make some hot chocolate.  One of the gals was convinced that sweetening hot chocolate with just dates would be a texture and taste nightmare, but she was pleasantly surprised.  Delish and a treat you can feel totally ok about giving your kids!  (Or yourself!)  Fun and frothy, too!  🙂

  • 2 cups non-dairy milk of your choice (I’ve done it successfully now with both unsweetened almond milk and coconut milk, both homemade; I surprisingly liked the almond better… I found the coconut taste a bit distracting)
  • 1 1/2 Tbsp cocoa powder (or to taste)
  • 9 – 10 small dates (I used deglet noor), pits removed; about 2.5 oz.
  • a few drops of vanilla extract

In a Vitamix or other high powered blender, combine all ingredients.  Run until as hot as you’d like (2 – 3 minutes).  Serve immediately.
