Grilled Hummus Sandwich with Caramelized Onions and Wilted Spinach

Whipped this up for Dan and my lunch to pair with some leftover soup.  DELICIOUS!  Should have made more!

Take a little bit of time for the onions to caramelize, but isn’t much effort.  Makes two sandwiches.

  • olive oil
  • 1 onion, thinly sliced
  • 1/8 tsp salt
  • 1/4 tsp succanat or sugar
  • handful of spinach leaves
  • some hummus (maybe about 1/4 – 1/3 cup?)
  • 4 slices of bread

Drizzle a bit of olive oil in a saute pan.  Once hot, add onion, salt and sugar.  Saute on medium for about 20 minutes, stirring occasionally.  Once done, throw the spinach leaves in and cover and allow to wilt.

Prepare bread by spreading hummus on one side of each pair.

Once onions are done, remove from pan and add a bit more oil.  Places 4 pieces of bread in pan, outside of sandwich down.  Allow to cook on medium until bread is browned.  Remove from pan, add onions to sandwich and assemble.  Enjoy immediately and wish you made more.  😉
