Guilt-free snacking. I let my 5 year old have as much of this with some apples as she wants. I made it without chocolate chips because I didn’t like the texture of chocolate chips in it, but you could totally add them! Modified from this recipe.
- 1 can white beans with water
- 7 oz. dates, cut in half
- 1/8 tsp salt
- 1/8 tsp baking soda
- 1 tsp vanilla
- 1/4 cup peanut butter (all natural, just peanuts preferred!)
- 2 Tbsp ground flax meal
- Optional: additional sugar (brown sugar or succanat) – add this if serving to people who aren’t used to healthy desserts 😉 up to 1/4 cup or so or to taste!
- Optional: handful of chocolate chips
If you have time, soak white beans (with a bit of their water) and dates in a food processor until you are ready to proceed.
Add remaining ingredients (except chocolate chips if using). Process well until very smooth. Be patient.
Keep refrigerated and serve with apples or crackers or whatever you wish!
