Date-sweetened Chocolate Chip Cookies

No sugar!  That’s right!  All the sweetness is from the dates, so no added sugar.  And they taste good!  Yahooooo!  (Ok, ok, there is sugar in the chocolate chips…..  Oh, well.)  I made this recipe up and it turned out delicious!

  • 5 oz (or 1 cup) pitted dates
  • almond milk for soaking
  • 1 Tbsp ground flax meal
  • 3 Tbsp warm water
  • 1/4 cup coconut oil or Earth Balance
  • 1 cup whole wheat flour
  • 1 1/2 tsp tapioca starch (or corn starch)
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 1/2 cup chocolate chips

Place the dates in a bowl and cover with almond milk.  Allow to soak for an hour or overnight.

Place the flax meal and water in a small bowl and allow to sit for 10 minutes.

Preheat oven to 350 degrees.

Drain dates.  (Save almond milk to drink for a sweet treat!)  Place dates in a food processor with the oil.  Process until smooth and somewhat creamy.  Empty into a bowl and add flax/water “egg”, flour, tapioca starch, salt, baking soda, and vanilla.  Stir well.  Add chocolate chips and stir in.

Grease a cookie sheet and place small spoon size amount blobs and smush them down a little.  They won’t spread out much so you can crowd them.  Bake for 12 – 16 minutes or until done.  (They should no longer look squishy and the bottoms should be browned and the tops golden.)  Allow to cool a couple minutes on the cookie sheet.  Then cool on a cooling rack the rest of the way.
