Sweet Potato Soup with Ginger

This soup is creamy and sweet with a bit of spice.  My 5 year old ate it without complaint, which is impressive because she typically doesn’t like sweet potatoes.  (I called it “candy soup” when I served it to her since the sweet potatoes make it rather sweet.)  It is another recipe I modified from here.


  • Olive oil, water or broth for sauteing
  • 1 onion, chopped
  • 2 Tbsp minced fresh ginger
  • 1/4 tsp red pepper flakes (optional or to taste)
  • 3 lbs sweet potatoes or yams, peeled and cut in 1″ cubes or so (size doesn’t matter – will just dictate cooking time)
  • 4 cups veggie broth
  • 1/8 tsp vanilla extract
  • 2 Tbsp fresh lime juice

Saute onion until soft.  Add ginger and red pepper flakes and saute a few minutes more.  Add sweet potatoes and veggie broth and simmer until sweet potatoes are soft.  Puree with an immersion blender (or in a regular blender in batches).  Add vanilla and lime juice and stir well.  Serve.
