Creamy Broccoli Chowder

Comfort food yumminess!

I modified it from this recipe.  We served it for dinner with a nice green salad, but would be great with bread, too.


  • 1 cup raw cashews
  • 5 cups veggie broth
  • 1 1/2 lbs potatoes, chopped
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tsp dried basil (fresh would be lovely)
  • ground black pepper
  • 1 1/4 lbs broccoli, chopped small

In a blender (or bowl with immersion blender), combine cashews and some (1 – 3 cups) of the veggie broth.  Puree until completely smooth.  Pour into a soup pot and add remaining broth, potatoes, onion, garlic, basil and ground black pepper.  Simmer until potatoes are tender.  Puree with an immersion blender or in a standard blender.  Pour back in soup pot and add broccoli.  Simmer until broccoli is tender.  Serve and enjoy!
