Raw Peanut Butter Cookies

These are a lot like a Larabar in cookie form.  But, my daughter doesn’t like Larabars (or Clif Kit’s Bars like I usually buy) for some reason, so I wanted to make them look like a cookie.  The deception worked.  🙂  I based this one this recipe and noted their additions that I didn’t use in the Optional ingredients.  I liked keeping it even simpler and healthier!


  • 3/4 cups (5 1/2 oz) dates (pitted)
  • 1/2 cup peanut butter (just peanuts, preferably)
  • 1 tsp vanilla
  • 1 pinch salt
  • 1/4 cup nuts of your choice (I used pecans, but next time might stick with peanuts to stay with the peanut theme)
  • Optional: added sweetener (1 Tbsp honey or maple syrup), chocolate chips (1/4 cup)

Place dates in food processor and process until they start forming a big doughy ball.  Break up with spoon and add remaining ingredients and pulse until well combined and chopped to your liking.  Roll into balls and place on wax paper.  Serve as is, or press with a fork for the quintessential peanut butter cookie look.  Store in refrigerator.
