Pumpkin Pie Energy Bites

Perfect for fall and pumpkin pie lovers.  I am not a pumpkin pie fan and didn’t really enjoy these, but everyone else did!  Based on this recipe.


  • 1/2 cup plain pumpkin puree
  • 1/2 cup almond butter (one that is just almonds)
  • 1/4 cup pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1 1/3 cup rolled oats
  • 2/3 cup pumpkin seeds (pepitas)
  • 1/3 cup raisins

Combine all ingredients in a bowl and stir until fully combined.  Line a 9×9 glass pan with wax paper.  Pour the mixture in the pan and use a spatula to press down firmly.  Freeze for several hours.  Remove wax paper and place on cutting board.  Cut into squares.  Place in a ziploc bag and store in a freezer.  Enjoy a taste of fall in every yummy bite!
