Cilantro Pesto

We had a ton of cilantro piling up from our CSA so I decided to give a cilantro pesto a try.  I made this up based on my standard basil pesto recipe.

I failed to take a picture – but it just looks like pesto!!   🙂

  • 4 bunches cilantro, with about 2 – 3 inches cut off the ends (about 9 oz once ends of stems are cut off)
  • 1/2 cup raw walnuts
  • 3 large garlic cloves
  • 1/2 cup EVOO
  • 1 Tbsp lemon juice or white wine vinegar
  • 1/2 tsp salt

Combine everything into a food processor and process until completely minced.  Serve over pasta and veggies or however you wish!
