Whole Wheat & Spelt Pizza Dough

I decided to change it up a bit and make a new pizza dough!  My friend Susanne passed this recipe along to me and it worked great.  We each made our own pizzas with it.  DELICIOUS!

  • 1 1/4 cups warm water (110 degrees if you have a candy or other thermometer to use!)
  • 2 1/4 tsp active dry yeast (or one packet)
  • 1 Tbsp honey
  • 1 1/2 cups spelt flour (6.25 oz if you prefer to weigh)
  • 1 1/2 cups white whole wheat flour (7 oz)
  • 1 1/2 Tbsp olive oil
  • 1 tsp salt

Add the yeast and honey to the warm water and allow to sit for 10 minutes (should get foamy).  Meanwhile, combine the rest of the ingredients in a food processor with a dough blade (or use a bowl and spoon).  Add water mixture once ready and turn on food processor until it forms a nice ball.  Lightly oil, then flour a bowl.  Place dough in bowl and knead with floured hands a few times.  Cover with plastic wrap and a towel for an hour or more.  Dough should double in size and spread out.  Remove from bowl and place on a floured surface for rolling.  Bake at 350 for about 5 minutes before topping and baking again.
