Cucumber Salad

I’ve been making this salad for ages.  Simple and yummy.  It’s quick to make but needs some time for chilling.


  • 1/2 cup water
  • 1/2 cup white vinegar
  • 1/4 – 1/2 cup sugar (tastes better with 1/2 cup, but I have a hard time using that much sugar!)
  • 12 – 16 oz cucumber, quartered lengthwise and sliced (I generally peel, but left the peels on since they are garden cucumbers)
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped chives, green onions, or red onions
  • 1/4 cup chopped roasted, unsalted peanuts

In a small saucepan, combine water, vinegar, and sugar.  Bring to a boil and simmer, uncovered, for 5 minutes or so, stirring regularly to dissolve the sugar.  Place in fridge to cool (or freezer if you are short on time).

Combine cucumber, cilantro, and chives.  Once liquids are cool, pour over veggies.  Add chopped peanuts when serving.
