Didn’t have anything to eat for lunch, so I whipped this up. Yummy, easy. My 4 year old loved it too.
- “Cheese” sauce (I omitted the miso and now buy the roasted red peppers jarred making the sauce really easy)
- 1 can of beans of your choice (+ 1/4 tsp salt if they are unsalted)
- 4 tortillas of your choice (I used Ezekiel sprouted)
Prepare cheese sauce and warm beans. Drain and mash beans a bit so they stick together some. Spread some beans on one tortilla, sauce on the other. Then put together and warm on a griddle. Cut and serve with salsa, guac, or whatever!
