Citris Collard Greens with Raisins

Collards are probably my least favorite green.  This dish however was superb.  I think this will be my go-to collard recipe from now on!


  • 2 bunches of collard greens, stems removed and chopped finely
  • 1 Tbsp salt
  • 2 cloves garlic, minced
  • 2/3 cup raisins
  • 1/4 – 1/2 tsp salt, to taste
  • 1/3 cup fresh orange juice (squeezed from 1 1/2 oranges)

In a large pot, bring several inches of water and 1 Tbsp of salt to a boil.  Add greens and cook about 10 minutes or until bright green and tender.  When finished, pour into a colander and rinse well with cold water to keep from cooking further.  Squeeze water out before adding in the next step.

In the large pot, heat olive oil, water or broth.  Saute garlic until starting to brown, then add greens, raisins, and 1/4 – 1/2 tsp salt.  Cook, stirring continuously until heated through.  Add orange juice and cook for another few seconds.  Remove from heat and serve immediately.

    Made these tonight and they were a hit! Steve, Mason and I really liked them, and Brendan and Graham ate a small amount without complaining. Will definitely make them again.
