Chocolate Date Candies

Super simple and yummy! And the source of sweetness is all natural – dates! Based on this recipe.

  • 1/2 cup raw cashews
  • 1 1/4 cup dates (pitted)
  • 2 Tbsp cocoa powder (or more…. To taste!)
  • 1/2 tsp vanilla

Combine cashews, dates, and cocoa powder in a food processor and process until fully chopped (several minutes). Add vanilla and process some more. Grab a bit between your fingers and make sure it sticks together well. If it’s too dry, add a bit of water of non-dairy milk (a teaspoon at a time) and process some more.

Roll into balls (mine were about 1/2″ in diameter and made 22). Refrigerate for at least 2 hours before enjoying. Store in the refrigerator.
