I was looking to make a dessert for my husband’s birthday and I went CHOCOLATE. Started with the chocolate cake below (based on this recipe) and then topped it with chocolate mousse and then finally finished it off with coconut milk whipped cream and a bit of fresh shredded coconut. Oh, YES.
- 1 1/2 cups whole wheat pastry flour
- 1 tsp baking soda
- 4 Tbsp cocoa powder
- 1/2 tsp salt
- 2/3 cup succanat (evaporated cane sugar) or white sugar
- 1 1/2 tsp vanilla
- 1/3 cup coconut oil, in liquid form (microwave for about 20 – 30 seconds and then stir)
- 2 tsp apple cider vinegar
- 3/4 cup cold water
Preheat oven to 350. Combine all the dry ingredients. Add the liquid ingredients and mix until just combined.
Cupcakes – Fill half full and bake 11 – 14 minutes or until a toothpick comes out clean. Or, if topping with other things like I did, fill less than 1/4 full (one spoonful) and bake 10 – 12 minutes.
Cake – grease and flour cake pan and bake 25 – 35 minutes or until a toothpick comes out clean.
Allow to completely cool before topping or frosting.
