Chocolate Date Dip or Dessert

A yummy but quite healthy sweet treat!  I made some tweaks to this recipe and our family gave it two thumbs up!  The “secret” ingredient is beans.  Shhhhhhh.  We served it with sliced apples and bananas for dipping last night as dessert.  Today I ate it straight up like a chocolate mousse after lunch.  YUM.

  • 6 – 8 oz dates (I went with 6 oz as I prefer things not crazy sweet, but I could see how some people used to sweeter things might want it sweeter)
  • 1/2 cup water
  • 1 1/2 cups (1 can) beans of your choice (I used red adzuki beans, but cannellini or great northern beans would work really well too – or even pintos!), drained and rinsed
  • 1/2 cup almond butter
  • 1 1/2 Tbsp cocoa powder, or more to taste
  • 1/2 tsp vanilla
  • 2 Tbsp almond milk
  • 1/4 tsp cinnamon

In a small saucepan, simmer dates and water uncovered for 5 minutes or until they’ve soften nicely.

Combine softened dates and water with all other ingredients into a food processor.  Process for a couple of minutes until smooth, scraping down as needed.  Refrigerate and serve cold with fruit of your choice.  Package small containers for freezing for easy entertaining or snacking in the future!
