French Fries

Healthier french fries!  Inspired by this recipe, but I simplified it.


  • 1 1/2 lbs russet potatoes
  • salt
  • olive oil spray

Bring a large pot of water to a boil (with shakes of salt) and preheat the oven to 425 degrees.

Cut the potatoes in “steak fry” shape, about 1/4″ thick.  Add the potatoes to the boiling water and boil for THREE minutes.  While boiling, fill a large bowl with ice water.  After the 3 minutes of boiling, drain the potatoes and dump into the ice water.  Once the potatoes are cool, drain the ice water and dump the potatoes onto a kitchen towel and blot them dry.

Spray with a bit of olive oil, sprinkle with a good amount of salt and toss well.  Bake until tender, tossing/flipping after a bit of time.  It should take about 10 – 20 minutes per side.  If you want to crisp them up a bit more once they are tender, broil them for 1 minute at the end.
