Zucchini Cashew Hummus

Not often that you’ll find a paleo recipe on a plant based blog.  But, my friend Diane shared this non-bean hummus recipe with me and it was fantastic.  (She said it came from Cooking the Paleo Way, and I modified it to suit me.)  I think it tastes remarkably like hummus – you would never guess the ingredients!

  • 1 cup cashews
  • 2 medium zucchini, roughly chopped
  • 2/3 cup tahini
  • 1/2 cup lemon juice
  • 1 garlic clove, minced
  • 1 Tbsp ground cumin
  • 1 tsp salt, or to taste

In a food processor, grind the cashews to a powder.  Add the remaining ingredients and let the motor run until fully pureed.  Serve as you wish – as a dip, topping falafel or veggie burgers, or however you want!  It makes a lot.  I froze two containers of it to pull out for a later date if I’m entertaining and need a hummus to serve or making falafel or veggie burgers and need a sauce!
