A special treat inspired by Rice Krispies Treats and this recipe. The flavor is nothing like Rice Krispies Treats, but they are far far healthier and still delicious.
- 1 cup peanut butter (I used just fresh ground peanuts, but I bet a more standard PB might work better for texture even if it’s less healthy)
- 1/2 cup honey
- 1/2 tsp vanilla
- 3 cups brown rice crispy cereal (I used Barbara’s)
Heat the peanut butter and honey slowly on the stove until heated through and thinner. Remove from heat and add vanilla. Stir in cereal. Press into a 9×9 glass baking pan (no greasing necessary) with a spatula. Allow to cool.
