My friend Susanne also passed this idea along to go with that yummy Tomatillo Avocado Guacamole. I tweaked the spices some and was thrilled with the resulting dish. I am not a huge fan of tempeh, but it’s a healthier alternative over tofu, so I’m always excited when I find a tempeh recipe that I love!!
Consider increasing the recipe if feeding more than 2 or 3 people unless you have a lot of side dishes.
- 1/2 cup onion (half an onion), diced
- 2 garlic cloves, minced
- 1 Tbsp chili powder
- 1/2 Tbsp cumin
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1 package tempeh
- 1 lime, juiced
Saute the onion and garlic in olive oil, water or broth. Once soft, add spices and saute a couple of minutes more. Crumble the tempeh into the pan and saute a few minutes. Add lime juice and serve in your choice of taco shell.
