Sweet Potato Cornbread Cakes

These were really cool – it’s like a sweet potato cake meets cornbread.  Got thumbs up from all of our family and then I took some on a hike the next day and it was a great snack!  Inspired by this recipe.

  • 1 lb sweet potato, peeled and chopped
  • 1 Tbsp ground flax
  • 3 Tbsp warm water
  • Heaping 1/4 cup diced onion
  • Heaping 1/4 cup diced bell pepper of your choice – green or red
  • 3/4 cup cornmeal
  • 1/4 cup whole wheat flour
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp chili powder

Prepare sweet potato for mashing however you wish – boiling, steaming, microwaving.  Then mash with a potato masher.

Mix ground flax and water in a small bowl and set aside for several minutes.

Saute onion and pepper in a little oil, water or broth until soft.

Preheat oven to 425.  Combine: mashed sweet potato, flax & water, cooked onion and pepper, and all remaining ingredients in a bowl.  Stir well until everything is combined.

Form patties with the mixture of your desired size – making them about 1/2″ thick or so.  On a baking sheet with a piece of parchment paper, spray with a little oil and then place patties for baking.  Bake 10 minutes then flip.  Bake another ~5 minutes.  They should be firm to the touch.  Serve and enjoy!
