So, my new-found excitement over eating raw kale made me think…. why make a kale salad difficult or fancy. How about you just replace the lettuce in your basic green salad with kale? Try it. If you aren’t sure about it, do half lettuce and half kale.
- kale, de-stemmed, torn into bite size pieces
- salad toppings of your choice….. top one: roasted sunflower seeds, dates (cut into slivers), apple slices, toasted chopped walnuts bottom one: roasted sunflower seeds, dates (cut into slivers), red pepper slices, toasted chopped walnuts
- dressing of your choice…. mine: Newman’s Own Light Balsamic
Don’t hesitate to dress the kale ahead of time and allow the dressing to tenderize the kale a bit. Toss everything together and serve. Easy peasy, healthy too!
