Kale Salad

I was reading a blog that has some recipes on it that are meant to be copies of things at the Whole Foods salad (and other) bars. Here is one of them that particularly appealed to me. I need to eat kale raw more often. I am really enjoying it!!

  • 2 Tbsp tahini
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp lemon juice
  • 2 Tbsp Bragg’s liquid aminos or tamari or soy sauce
  • 2 Tbsp nutritional yeast
  • 2 cloves of garlic, minced
  • 1 really large bunch kale or 2 small bunches kale, stems removed
  • sesame seeds

Combine tahini through garlic in a small food processor and process until smooth.

Tear kale into bite sized pieces and place in a large bowl. Pour dressing over kale and massage the dressing into the kale with your fingers, so that the dressing is evenly distributed.  (Or, just toss really well making sure the dressing gets everywhere.)  Be sure to test every now and then to be sure you have a good ratio of kale to dressing – you don’t want to overdress!

If you have time, refrigerate and hour or more before serving. Sprinkle with sesame seeds before serving, if you wish!

    Made this today to take to a friend’s house for lunch. Super yummy! I added some grated carrots, sliced green onions and toasted pumpkins seeds. Will definitely make it again!
