I’ve been making this salad for years, originally modified from some old photocopy of a cookbook. It’s a nice dish for a summer (or anytime) potluck, too!
- 1/4 cup Veganaise
- 2 tsp lime juice
- 1/2 tsp curry powder
- 1/2 tsp ground ginger
- 2 medium tart apples of choice (e.g. granny smith; although I actually used braeburn tonight)
- 1/2 cup diced celery
- 1/2 cup apple juice sweetened cranberries (or craisins or raisins or any small dried fruit of your choice)
- 1/4 cup green parts of green onions, chopped
- 1/4 cup chopped almonds
In a large bowl, whisk together the first four ingredients. Then throw everything but the almonds in. Stir well. Refrigerate. Add chopped almonds just before serving.
