When it’s a blizzard outside, it’s a day for snow ice cream! Thanks to my friend Kristina for the inspiration. Here’s my plant-based version for one serving. Scale up as you wish!
- 5 scoops of (fresh, untouched) snow using a 1 cup measuring cup as your scooping device
- 1/3 cup unsweetened original almond milk, or non-dairy milk of your choosing
- 2 tsp maple syrup
- 1/8 tsp vanilla
Working quickly, combine all ingredients in a big bowl. Stir until well combined and eat immediately. Enjoy! 🙂 (Feel free to tweak quantities as you wish!)
