Aloo Saag (Indian Potatoes and Greens)

Oooh, yum!!  This was fantastic!  Very pleased how this turned out, particularly since I was mostly flying from the seat of my pants and practically burning the Swiss chard!

  • 1 tsp cumin seeds
  • Olive oil for sauteing
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 medium/large potato (about 10 oz), chopped into 1/4″ dice
  • 1 – 2 bunches of Swiss chard, spinach, or greens of choice (feel free to use more than one!), 10 oz once stems are removed, chopped
  • 1/4 cup water
  • ground black pepper
  • 1 tsp coriander
  • 3/8 tsp salt

In a hot saute pan, heat the cumin seeds over medium heat until slightly browned.  Add a bit of olive oil and onion once the oil is hot.  Saute until onion is soft.  Add garlic and potatoes.  Saute with the lid on, stirring every couple of minutes.  Cook until potatoes are tender.

In a large pot, put the greens and 1/4 cup water.  Heat on medium and allow the greens to steam, checking and stirring every couple of minutes.  Add additional water if needed.

Once the potato/onion mixture and greens are done, combine.  Add black pepper, coriander and salt.  Serve.
