Oh so yummy! Most recently these were a topping for homemade pierogies, but they can add a nice flavor or topping to so many other possibilities. Wish I had some of these for my veggie burgers the other night!
- 1 lb onions, thinly sliced
- 2 Tbsp olive oil
Heat olive oil in a saute pan on medium. Once hot, turn down to low and add onions. Toss to coat. Put lid partially on pan and cook on low for about 20 – 30 minutes, stirring every 5 minutes or so, until a little amber in color and soft. Remove lid and cook on medium for another 10 minutes, again stirring every 5 minutes or so.
