Burritos are a quick easy meal in our house! And they are so customizable. Experiment with different filling combinations.
This makes about 3 servings. Double it if you want.
- 1 small onion
- 1 can of beans (or equivalent amount, as we don’t buy canned beans)
- 1 tsp cumin
- 1 tsp coriander
- 1/4 tsp salt if your beans are unsalted
- 2 cloves of garlic, minced (omitted when I’m rushing)
Saute onion (and garlic) in a bit of oil until onions are cooked to your liking. Add spices and stir. Add beans until heated through.
- 2 medium zucchini, cut lengthwise into quarters
- olive oil
- ~1/8 tsp salt
- ~1/4 tsp cumin
- ~1/4 tsp chili powder
- ~1/4 tsp garlic powder
- ground black pepper
Preheat grill. Toss zucchini with a drizzle of olive oil and the spices. Set the grill on low. Place zucchini on the grill. Flip after about 5 minutes. Cook another ~5 minutes until zucchini is cooked through. Remove from grill and cut into 1″ pieces.
- Whole grain tortillas
- Chopped tomatoes
- Chopped lettuce
- Sliced avocados
- Chopped cilantro
Warm tortillas on a griddle and fill to your liking!! Enjoy!
