Grilled Zucchini and Black Bean Burritos

Burritos are a quick easy meal in our house!  And they are so customizable.  Experiment with different filling combinations.

This makes about 3 servings.  Double it if you want.


Bean mixture:

  • 1 small onion
  • 1 can of beans (or equivalent amount, as we don’t buy canned beans)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/4 tsp salt if your beans are unsalted
  • 2 cloves of garlic, minced (omitted when I’m rushing)

Saute onion (and garlic) in a bit of oil until onions are cooked to your liking.  Add spices and stir.  Add beans until heated through.

Grilled Zucchini:

  • 2 medium zucchini, cut lengthwise into quarters
  • olive oil
  • ~1/8 tsp salt
  • ~1/4 tsp cumin
  • ~1/4 tsp chili powder
  • ~1/4 tsp garlic powder
  • ground black pepper

Preheat grill.  Toss zucchini with a drizzle of olive oil and the spices.  Set the grill on low.  Place zucchini on the grill.  Flip after about 5 minutes.  Cook another ~5 minutes until zucchini is cooked through.  Remove from grill and cut into 1″ pieces.

The rest:

  • Whole grain tortillas
  • Chopped tomatoes
  • Chopped lettuce
  • Sliced avocados
  • Chopped cilantro
  • Salsa

Warm tortillas on a griddle and fill to your liking!!   Enjoy!
