I used this recipe for these cookies, but mine turned out looking totally different! Perhaps it’s the high elevation, although mine are less flat, which is unusual. Anyway, these cookies are very richly chocolatey. If you love dark chocolate, then these cookies are for you. Of the four holiday desserts I baked and took to our Christmas Eve dinner, these were the crowd favorite!
- 1 cup raw almonds
- 2 Tbsp cocoa powder
- packed 1/4 cup pitted dates or date pieces
- scant 1/4 tsp salt
- 1/2 tsp baking soda
- 1 cup chocolate chips
- 1 tsp vanilla
- 2 Tbsp vegetable oil (or coconut oil if you want a coconut hint)
If your dates are cold or hard, you might consider putting the dates in an oven at a low temperature (like 120 – 150 degrees) to soften. Combine almonds, cocoa powder, dates, salt and baking soda in a food processor and process until fine.
Combine the chocolate chips, vanilla and oil in a glass measuring cup and microwave for 1 minute. Stir to allow the chips to melt.
Add the dry ingredients to the wet ingredients and combine well. Preheat oven to 350 degrees. Drop in small spoonfuls on a parchment lined baking sheet. Bake for 9 minutes. Allow to cool on the baking sheet for 10 minutes, then transfer to a cooling rack to cool the rest of the way.
