These cookies were inspired by this recipe. If you aren’t trying to do something flour-less, I recommend these instead. But for not having flour, these are fantastic. A little crunchy/chewy with a great flavor and, of course, chocolate chips!
- 1 1/2 cups rolled oats
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup brown sugar
- scant 1/4 cup white sugar
- 1 Tbsp oil
- 1 tsp vanilla
- 2 – 3 Tbsp unsweetened almond milk (start with 2)
- 1/4 cup chocolate chips
Preheat oven to 375. Process oats, baking soda, salt, brown sugar and white sugar until fine. Add oil, vanilla, and non dairy milk. Pulse to combine well. Stir in chocolate chips by hand. Form into small balls (1 1/2″ diameter) and bake for 8 – 9 minutes (until browned along the edges) on parchment paper. Give yourself enough space – they spread out a lot. (If you aren’t at high altitude, perhaps yours will not spread out as much!)
Allow to cool on the pan for a couple of minutes. Transfer to a wire cooling rack to cook the rest of the way.
