Ooey Gooey Chocolate Chip Blondies

I’m not sure if these are SUPPOSED to be ooey gooey, but at least at high elevation they are.  (The recipe this is based on doesn’t look so gooey!) If you like ooey gooey brownies, then you’ll likely like this (much much healthier) blondie recipe.  And, they are gluten free!


  • 1 1/2 cups white beans (or chickpeas), rinsed and drained
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup brown sugar
  • 2 tsp vanilla extract
  • 1/4 cup ground flax seed
  • 1/4 cup peanut butter (just peanuts preferably!)
  • 1/2 cup chocolate chips

Preheat oven to 350 degrees.  Put everything except chocolate chips in a food processor and process until fully pureed and combined.  Add chocolate chips and stir in by hand.

Grease a 9 x 9 glass pan.  Pour in batter.  Bake for 30 – 40 minutes.  Cool well before cutting and serving.

    HAve you tried Happy Herbivore’s black bean brownie’s. I have made them twice. People on the internet rave, yet I don’t like them. Glad you found these yummy!
