This recipe’s beauty is in its simplicity. And it is SO good!! Liven any meal up with a side of roasted sweet potatoes, or even serve them as an after school snack!
- Sweet potatoes (2 1/2 lbs yields about 3 – 4 servings)
- Olive oil
Preheat oven to 400 degrees. Wash but don’t peel the sweet potatoes. Cut into 3/4 inch cubes. Toss with a drizzle of olive oil on a baking pan. Bake for about 25 – 30 minutes until soft and starting to brown. The more spread out they are on the pan, the more they will brown. If they are crowded, like in my picture, they won’t brown much.
