Peanut Butter Oatmeal Chocolate Chip Cookies

These cookies are aren’t healthy, per se, but they are healthier than many others you’ll find this time of year.  They are plenty yummy to feel like a real treat, but better than white flour and chemical laden alternatives!  🙂

Recipe based on the cookbook: Give Them Something Better

  • 2 cups quick oats
  • 1 1/3 cups whole wheat pastry flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup brown sugar
  • 1/2 cup natural peanut butter
  • 1/2 unsweetened almond milk
  • 1/3 cup vegetable oil
  • 1/4 cup white sugar
  • 4 tsp ground flax seeds
  • 1 1/2 tsp vanilla extract
  • 1/3 cup chocolate chips

Preheat oven to 350 degrees.  Mix together dry ingredients (first 4).  Whisk (or use an electric mixer) together wet ingredients (next 7).  Combine wet into dry and mix until combined.  Add chocolate chips and mix to incorporate.

Scoop dough balls out on a cookie sheet.  They won’t spread out hardly at all, so feel free to cram a bunch in.  Bake 11 to 12 minutes or until just lightly browned.  Cool on pan a couple of minutes, then cool on a wire rack.   Enjoy!!
