Healthier Mashed Potatoes

Who doesn’t love a nice pile of mashed potatoes?  They are definitely a comfort food for me.  Slip some cauliflower into yours to sneak in tons of vitamins, minerals and anti-cancer phyto-chemicals!

I find that cauliflower can go bad quickly, so if I have it in the house and I can’t use it in time (or can’t use all of it), I chop it, steam half a head for about 5 minutes and then cool, put in a ziploc and freeze it for later use in this recipe.  It gets mashed up anyway, so it doesn’t matter that it kinda falls apart upon thawing.

  • 1 1/2 lbs potatoes of your choice, skins on!
  • 1/2 head cauliflower
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • black pepper, to taste
  • 2 Tbsp veggie broth or water, if needed

Roughly chop the potatoes.  Boil in water until tender, adding the cauliflower for the last 10 – 15 minutes (less if it is pre-steamed as described above).  Once cauliflower is soft, drain, add the remaining ingredients and mash well.  Add veggie stock or water as needed for consistency.
