Kale (Sesame) Salad

This salad is beautiful, healthy and delicious.  A great salad to bring to an event!  (Or just enjoy at home.)

  • 8 oz kale (1 bunch), ribs removed and chopped into fine strips
  • 1/2 head red cabbage, diced
  • 3 carrots, diced or shredded

Dressing (optional) – use whatever you want!

  • 1/4 – 1/3 cup olive oil
  • 1/4 – 1/3 cup rice vinegar, or vinegar of your choice
  • 2 – 3 Tbsp sesame oil
  • 2 Tbsp sesame seeds

Toss the kale, cabbage and carrots in a bowl.  Whisk the dressing ingredients together, starting with the lower amounts and adding more to the final product if necessary.  Toss the salad with the dressing and sesame seeds.  Keep refrigerated until serving.

CHEF’S TIP – Use any dressing you want!!  Below it is dressed with a balsamic dressing:
