Thanksgiving Salad

I like any kind of salad.  But, for Thanksgiving, I wanted to do something a little more special.  You don’t have to get too fancy to make a special salad, though.  This salad would have been really quick to put together had I not wanted the roasted beets and sliced kohlrabi in fun shapes.  That was the time-consuming part.  But, worth it for a special day!  A great salad to bring to your next gathering.

This was more than enough to feed 10 adults and 3 little kids:

  • 1 head green leaf lettuce, washed and torn into pieces
  • 5 medium beets roasted in slices and cut into shapes with mini shape cutters (If you are skipping the shapes, you’ll only need 3 beets as I saved the “waste” from the shape cutting for a later salad.)
  • handful of apple-juice sweetened dried cranberries
  • handful of roasted (un-salted) sunflower seeds
  • 1/2 – 1 apple, sliced
  • several slices of kohlrabi cut into shapes with mini shape cutters
  • crispy onion topping (we have made this in the past, but found a great already made one at our local natural foods store)
  • Newman’s Own light balsamic dressing
