Black Bean Burgers

These super simple burgers won’t win appearance or staying-together contests, but they are simple, quick and yummy.


Makes about 6 burgers

  • 2 cans black beans, drained
  • 1/2 cup cilantro, chopped
  • 1 Tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt if beans are unsalted, otherwise probably none needed
  • dash cayenne
  • black pepper to taste
  • 1/2 cup breadcrumbs*

Pulse black beans in a processor until well mashed.  (Or, alternatively, mash by hand.)  Mix all ingredients in a bowl until well incorporated.  Form into 6 patties.  Cook in a large non-stick pan with a bit of olive oil with the lid on, about 5 minutes each side or until browned.  Serve how you wish!

*Breadcrumbs – cheaper, healthier breadcrumbs:  Skip the mainstream grocery store breadcrumbs that are filled with junk and make your own.  Process sliced bread until crumbs.  Then, spread out to dry out over a couple of hours, or spread out on a baking sheet and put in a 200 degree oven for 5+ minutes or until dry.  One slice of bread will yield about 1/4 cup bread crumbs.
