Roasted Acorn Squash

When I want squash and I don’t feel like peeling and cubing it, I go for the simplest way!  This works for most types of winter squash.

Preheat oven to 450 degrees.  Cut the squash in half and scoop out the seeds.  Place flesh down in a glass baking pan and fill with 1/4″ of water.  (If you are in a rush, boil the water before pouring into the pan.)  Bake 30 minutes – 1 hour, depending on the size of the squash, until very tender.

Drizzle with some honey and sprinkle with cinnamon and a dash of nutmeg.
