Peanut Butter Coconut Squares

It’s hard to be efficient and productive while working on this blog when I need to get up every minute for another PB Coconut Square.  But, if I put the whole bag in front of me, then I would just eat them all at once.   At least by having to walk to the fridge each time, I eat a little less.  😉  These are yummy and addictive, but luckily they are good for you!

Modified from this recipe.

  • 1 cup quick oats
  • 1/2 cup peanut butter (I buy one ground at the store with nothing in it but peanuts)
  • 1/3 cup honey (or agave)
  • 1 cup coconut flakes, processed if they are large (I used unsweetened flakes that are just dried coconut)
  • 1/2 cup ground flax seed
  • 1 tsp pure vanilla extract
  • Optional: 1/3 cup chocolate chips, mini if you can find them without dairy

Combine all ingredients in a bowl and mix well.

Line a 9 x 9 glass baking pan with wax paper or parchment (larger than 9 x 9 so that it comes up the edges).  Spoon mixture into pan, distributing evenly.  Use a spatula to press firmly into the pan.  Freeze for about an hour.  Remove from pan by lifting up wax paper.  Cut into squares with a large knife.  Transfer to a container or bag for storage in your refrigerator (or freezer).

**Chef’s Note**  Our family loves these so much that I usually make a double batch and use a 9 x 13 pan instead!!
