Herbed Red Lentils

A quick and easy protein dish.  My four-year-old’s favorite!

  • 1 cup red lentils
  • 2 1/4 cups water
  • 1/2 – 1 cup chopped celery (2 stalks)
  • 1/4 – 1/2 cup chopped onion (1 tiny onion or half a medium onion)
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp sage
  • 1 tsp thyme
  • 1/4 tsp nutmeg

Rinse the red lentils well then drain.  (I just do this in the pot with a few changes of water, carefully pouring out the water each time.) Add all remaining ingredients and simmer (with the lid on) for about 20 – 25 minutes or until the lentils get mushy and fall apart.

Serve over brown rice.  (I use 1 cup uncooked brown rice, then cooked, to go with this meal.)

    This has become a staple at my house – thanks for sharing it! I have started adding diced carrots along with the celery and onion, and using veggie broth in place of the water. Yummy!
